  • 1 cup gluten-free flour blend

  • 1/2 cup unsweetened applesauce
  • 1/3 cup oil (canola or melted coconut)
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment or grease it.
  2. Whisk eggs and sugar until light and bubbly, then add in applesauce, oil, and vanilla.
  3. In a separate bowl, combine gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Toss the diced apples in the dry mix, then combine wet and dry ingredients until just mixed.
  5. Spoon the batter into the prepared loaf pan.
  6. Bake for 40-50 minutes, until golden and a toothpick comes out mostly clean. Cool before slicing.

Notes
