  • 2 very ripe bananas (about 1 cup), mashed
  • 1 large egg
  • 1/4 cup melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1/3 cup brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas and stir in the egg, melted butter or coconut oil, and vanilla.
  3. Fold in the oats, brown sugar, baking powder, cinnamon, and salt.
  4. Drop 1–2 tablespoon portions of dough onto the prepared baking sheet and flatten slightly.
  5. Bake for 12–14 minutes until the edges are set and golden.
  6. Cool on a rack before serving.

Notes

Use old-fashioned rolled oats for the best texture; feel free to add mix-ins like chocolate chips or nuts.
