- 2 1/4 teaspoons active dry yeast
- 1 cup warm milk (110°F / 43°C)
- 1 tablespoon sugar
- 3 cups gluten-free all-purpose flour blend (ensure it contains xanthan gum or add 1 teaspoon)
- 1/4 cup sugar
- 1 teaspoon salt
- 1/3 cup melted butter (or neutral oil)
- 2 large eggs
- 1/2 cup softened butter (for filling)
- 3/4 cup brown sugar
- 2 tablespoons cinnamon
Instructions
- Proof yeast in warm milk with sugar until foamy (5–10 minutes).
- Mix flour blend, sugar, and salt. Add melted butter, eggs, and foamy yeast, mixing until a soft dough forms.
- Let the dough rest for 20–30 minutes to hydrate.
- Roll dough between parchment sheets into a 12×16-inch rectangle.
- Spread softened butter, sprinkle brown sugar and cinnamon over the dough.
- Roll tightly and slice into 10–12 rolls.
- Place rolls in a greased 9×13 pan and proof for 30–45 minutes.
- Bake at 350°F (175°C) for 20–25 minutes until golden.
Notes
Serve warm with cream cheese icing or powdered sugar glaze. Pair with coffee or a milk latte.
