- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 tablespoon sugar
- 3 cups gluten-free all-purpose flour blend (with xanthan gum)
- 1 teaspoon salt
- 2 large eggs
- 2 tablespoons melted butter (or oil)
- 1 cup warm milk (or dairy-free milk)
Instructions
- Warm milk to 110–115°F and dissolve yeast with sugar; let it foam for 5–8 minutes.
- In a mixing bowl, combine flour blend, salt, eggs, melted butter, and the foamed yeast; mix until smooth.
- Scoop dough into 12 equal portions, shape into rolls, and place in a greased 9×13 pan.
- Cover and let rise for 35–45 minutes in a warm spot.
- Bake at 375°F (190°C) for 18–22 minutes until golden and internal temperature reaches about 200°F (93°C).
- Brush with melted butter and allow to cool slightly before serving.
Notes
For best results, measure the flour by weight. Allow rolls to cool at least 10 minutes before slicing.
