Ingredients
- 2 cups gluten-free flour blend
- 1 cup sharp cheddar cheese, shredded
- 2 large eggs
- 1 cup warm milk (or dairy-free milk)
- 1 packet (2 1/4 tsp) active dry yeast
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
- Optional: dried herbs, garlic powder
Instructions
- Mix yeast with warm milk and a pinch of sugar; let it froth for about 5 minutes.
- In a large bowl, combine gluten-free flour blend, salt, and optional herbs or garlic powder.
- Add in the eggs, olive oil, and yeast-milk mixture. Mix until a thick, sticky dough forms.
- Fold in the shredded cheese gently.
- Grease a loaf pan or Dutch oven and scoop the dough into it.
- Let the dough rise in a warm place until doubled in size, about 45 minutes.
- Preheat the oven to 400°F (200°C).
- Bake for 30 minutes, until the top is golden and the kitchen smells wonderful.
- Cool before slicing.
Notes
For best results, use fresh yeast. Allow the bread to cool before cutting to prevent gumminess.
