Ingredients

  • 1 cup quinoa
  • 2 cups milk (dairy or plant-based)
  • 1 diced apple
  • 1 tablespoon butter or oil
  • 1 teaspoon ground cinnamon
  • 12 tablespoons maple syrup
  • Pinch of salt

Instructions

  1. Rinse the quinoa under cold water.
  2. Toast the rinsed quinoa in a saucepan over medium heat for 1–2 minutes.
  3. Add 2 cups of milk and a pinch of salt. Bring to a simmer, then cover and cook for about 12 minutes until tender.
  4. Meanwhile, in a pan, sauté the diced apple with 1 tablespoon of butter or oil, 1 teaspoon of cinnamon, and 1–2 tablespoons of maple syrup until softened.
  5. Stir the sautéed apples into the cooked quinoa and adjust sweetness as desired.
  6. Let rest for a couple of minutes off heat before serving.

Notes

For creamier quinoa, consider using 2 1/4 cups milk per cup of quinoa and stir occasionally towards the end of cooking.
