- 3 ripe bananas

- 1 cup oat flour
- 1 teaspoon cinnamon (optional)
- 1/2 cup walnuts (optional)
Instructions
- Mash the ripe bananas in a bowl until smooth.
- Add cottage cheese, eggs, sweetener, and vanilla; mix until combined.
- Fold in oat flour and cinnamon by hand until just mixed.
- Pour the batter into a lined loaf pan.
- Optionally, top with sliced banana or walnuts.
- Bake at 350°F (175°C) for 40-50 minutes; check for doneness with a toothpick.
- Allow to cool before slicing.
