Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese, gluten-free flour, eggs, baking powder, salt, and honey.
- Mix until smooth and allow the batter to rest for 10-15 minutes.
- Pour the batter into a greased loaf pan.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before slicing to maintain the bread’s texture.
Notes
Store in an airtight container on the counter for up to two days or in the fridge for five days. Slices freeze well with parchment between them.
