Ingredients

  • 1/2 cup salted butter, softened
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate, chopped or chips
  • 1/2 cup macadamia nuts, lightly toasted and chopped
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Cream the butter and sugars until creamy and fluffy.
  2. Add the egg and vanilla, mixing until just combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Combine dry ingredients with wet ingredients on low speed until flour disappears.
  5. Fold in white chocolate and macadamia nuts.
  6. Chill the dough for 30 minutes if thicker cookies are preferred.
  7. Scoop 1.5 tablespoons of dough onto a lined baking sheet.
  8. Bake at 350°F for 9-11 minutes until the edges are set.
  9. Cool on the tray for 5 minutes before transferring to a rack.
