Ingredients

  • 1 packet or 1 tablespoon unflavored gelatin
  • 1 cup hot water (not boiling)
  • 1 cup cold water
  • 1 to 2 teaspoons zero-calorie sweetener (adjust to taste)
  • 1 to 2 tablespoons lemon or lime juice (optional)
  • Optional: 1 scoop unflavored collagen peptides or a half scoop of mild protein powder

Instructions

  1. Pour the hot water into a bowl or large measuring cup.
  2. Sprinkle gelatin on top and whisk until it fully dissolves.
  3. Stir in sweetener and citrus if using.
  4. Add cold water and whisk again.
  5. If adding collagen, stir it in now; if using protein powder, whisk slowly to avoid clumps.
  6. Pour into a glass dish or silicone molds.
  7. Refrigerate for 3 to 4 hours, until fully set.

Notes

For a smooth texture, whisk a little longer than you think necessary. Using silicone molds adds a fun touch.
