This quick and reliable gluten-free bread is perfect for sandwiches, toast, and everyday meals, offering a soft, sliceable texture without complicated techniques.

  • Total Time: 55 minutes
  • Yield: 10-12 slices (1 standard 9×5-inch loaf)

Ingredients

Scale
  • 2 cups (260 g) gluten-free all-purpose flour blend (add 1 tsp xanthan gum if blend lacks it)
  • 1 tbsp baking powder
  • 1 tsp fine salt
  • 2 tbsp granulated sugar or honey
  • 2 large eggs, room temperature
  • 1 cup (240 ml) warm milk or dairy-free milk (about 105–115°F / 40–46°C)
  • 1/4 cup (60 ml) olive oil or melted butter
  • 1 tsp apple cider vinegar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment.
  2. In a bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together eggs, warm milk, oil, and vinegar. Combine wet ingredients with dry and stir until just combined.
  4. Pour the batter into the prepared pan, smooth the top, and bake for 35–45 minutes until golden and an instant-read thermometer reads about 205°F (96°C).
  5. Cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

Let the loaf rest for 10–15 minutes after baking to help the crumb set and slice cleanly. Use a digital scale for weighing flour for consistent results.
