- 1 cup (227 g) unsalted butter, at room temperature
- 1 1/2 cups (300 g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups (360 g) gluten-free all-purpose flour blend
- 1 teaspoon baking powder
- 1/2 teaspoon fine salt
- 1/2 teaspoon xanthan gum (omit if your blend contains it)
Instructions
- Cream the butter and sugar together until light and fluffy, about 3–4 minutes.
- Add eggs and vanilla, mixing until combined.
- In a separate bowl, whisk together the flour, baking powder, salt, and xanthan gum.
- Mix the dry ingredients into the wet ingredients on low speed until just combined.
- Divide the dough, flatten into disks, wrap in plastic, and chill for at least 30 minutes.
- Roll the dough to 1/4-inch thick on a floured surface, then cut out shapes.
- Bake at 350°F (175°C) for 8–12 minutes until edges are set.
- Cool on a wire rack before decorating.
Notes
For best texture, measure flour by weight and chill the dough thoroughly before rolling.
