- 2 cups gluten-free self-rising flour
- 1/2 cup cold butter
- 3/4 cup cold buttermilk
- 1 tbsp sugar
- 1/2 tsp salt
Instructions
- In a cold metal bowl, toss the flour, sugar, and salt together.
- Cut in the chilled butter until pea-sized crumbs form.
- Stir in the cold buttermilk just until combined.
- Using an ice-cream scoop or two spoons, drop rounds onto a lined baking sheet.
- Bake at 425°F (220°C) for 12–15 minutes until risen and golden.
Notes
Keep everything cold, including the mixing bowl, to create steam pockets for a fluffier biscuit.
