- 6 to 7 medium apples, peeled and thinly sliced
- 1 cup gluten-free rolled oats
- 1 cup gluten-free all-purpose flour
- 3/4 cup light brown sugar
- 1/2 cup cold butter, cut into small cubes (or melted coconut oil for dairy-free)
- 1/2 cup chopped pecans or almonds (optional)
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup granulated sugar or coconut sugar
- 2 tbsp fresh lemon juice
- 2 tbsp cornstarch or tapioca starch
- 1/4 tsp cardamom (optional)
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F and prepare a 9-inch square baking dish with butter or oil.
- In a bowl, mix oats, gluten-free flour, brown sugar, cinnamon, and salt. Cut in the cold butter until craggy clumps form (or stir in melted coconut oil). Chill topping while slicing apples.
- In another bowl, combine sliced apples with granulated sugar, lemon juice, cornstarch, cinnamon, cardamom, and vanilla. Stir well.
- Tip the apple mixture into the prepared dish and spread evenly. Sprinkle the topping over the apples, ensuring full coverage.
- Place the dish on a sheet pan and bake for 40 to 50 minutes until browned and bubbly. Tent with foil if browning too quickly.
- Let the crumble rest for 15 to 20 minutes before serving warm with vanilla ice cream or yogurt.
Notes
For oat-free options, replace oats with chopped nuts or additional gluten-free flour. Dairy-free modifications are possible by using coconut oil. It can be made ahead or frozen for later baking.
