Instructions
- In a bowl, whisk together the eggs, almond milk, vanilla extract, and coconut sugar until well combined.
- Cut the gluten-free banana bread into thick slices.
- Dip each slice quickly into the egg mixture, ensuring both sides are coated but not soaked.
- Heat oil or butter in a nonstick pan over medium heat.
- Add the coated banana bread slices to the pan and cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from pan and serve warm with maple syrup, fresh berries, and nut butter if desired.
Notes
For best results, use slightly stale banana bread and cook on low heat to prevent burning.
