- 3 ripe bananas, mashed
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 2 large eggs
- 1/3 cup melted coconut oil
- 1 tsp vanilla extract
- 1 cup gluten-free flour blend

- 1/2 tsp salt
- 1/2 tsp cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the mashed bananas, coconut sugar, maple syrup, eggs, coconut oil, and vanilla extract until well combined.
- In a separate bowl, combine the gluten-free flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For best results, use overripe bananas and ensure your gluten-free flour blend contains xanthan gum for better structure.
