- 2 1/4 cups (300 g) 1:1 gluten-free flour blend
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon sugar
- 1 teaspoon fine salt
- 6 tablespoons (85 g) cold unsalted butter (or vegan shortening)
- 1 cup (240 ml) cold buttermilk (or 1 cup milk + 1 tbsp lemon juice)
Instructions
- Sift or whisk together the gluten-free flour blend, baking powder, baking soda, sugar, and salt.
- Cut cold butter into the flour mixture using a pastry cutter until pieces are the size of peas.
- Add cold buttermilk and stir until the dough just holds together, being careful not to overmix.
- Pat the dough to 1-inch thickness, cut with a 2-inch cutter, and place on a preheated baking sheet.
- Brush with melted butter and bake at 425°F (220°C) for 12–15 minutes until golden.
Notes
For dairy-free, substitute with coconut oil or vegan butter and use plant-based milk for buttermilk. For added flavor, consider variations like cheesy-herb or cheddar-garlic.
