A soft, sliceable gluten-free bread perfect for sandwiches and toast, using pantry-friendly ingredients.

Ingredients

  • 1 ½ cups gluten-free flour blend
  • 1 tablespoon psyllium husk or 1 teaspoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 packet (2 ¼ teaspoons) instant yeast
  • 1 cup warm water (105-115°F / 40-46°C)
  • 2 large eggs
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the gluten-free flour blend, psyllium husk (or xanthan gum), salt, and sugar.
  3. In a separate bowl, bloom the yeast in warm water for about 5 minutes.
  4. Beat in the eggs and olive oil to the yeast mixture.
  5. Combine wet and dry ingredients until well mixed, forming a batter-like dough.
  6. Let the dough sit in a warm area for 45-60 minutes to proof.
  7. Pour the dough into a greased 9×5-inch loaf pan.
  8. Bake for 35-45 minutes, until the internal temperature reaches 200-205°F (93-96°C).
  9. Allow to cool completely before slicing.

Notes

For different variations, you can add seeds or herbs to the dough or use a different flour blend for a new flavor.
