- 3 large eggs, room temperature
- ¼ cup olive oil or melted butter
- 1 tsp apple cider vinegar
Instructions
- Wake Up Your Yeast: In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit until foamy.
- Mix Your Dry Team: In a large bowl, whisk together flour blend, xanthan gum, and salt.
- Combine the Wet Ingredients: In a separate bowl, beat eggs, then stir in oil and vinegar.
- Bring It All Together: Pour the foamy yeast and egg mixtures into the flour and stir until you have a thick batter.
- First Rise: Transfer batter to a greased loaf pan. Cover and let rise in a warm place until it rises about 1 inch above the pan rim.
- Bake to Golden Perfection: Preheat oven to 375°F and bake until the top is golden brown and the internal temperature reaches 205°F.
- Cool: Let cool in the pan for 10 minutes, then transfer to a wire rack and let cool completely before slicing.
