- 1¼ cups gluten-free all-purpose flour (with xanthan gum)
- ½ tsp fine salt
- ¼ tsp baking powder
- 4 tbsp cold unsalted butter
- 1 cup finely grated sharp cheddar
- 1–2 tbsp cold water
- ¼ tsp mustard powder
Instructions
- Mix gluten-free flour, salt, and baking powder in a bowl.
- Cut in cold unsalted butter until the mixture resembles coarse crumbs.
- Stir in grated sharp cheddar, cold water, and mustard powder.
- Press into a disk and chill for 30 minutes.
- Roll dough to 1/8″ thickness and cut into 1″ squares.
- Dock each square with a fork to keep them flat.
- Place on a parchment-lined baking sheet and bake at 375°F for 12–15 minutes until edges are golden.
- Cool completely on a wire rack before serving.
Notes
For best flavor, shred your own cheese and chill the dough to prevent it from spreading.
