  • 1 teaspoon vanilla extract

  • 1/2 teaspoon xanthan gum (if needed)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Cream butter and cream cheese with sugar until light and fluffy.
  2. Add egg and vanilla, mixing until combined.
  3. Fold in gluten-free flour blend, xanthan gum, baking powder, and salt.
  4. Chill the dough for 30–60 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Roll dough between parchment or scoop and flatten slightly.
  7. Bake for 9–12 minutes until edges are set.
  8. Cool on the sheet for 5 minutes, then transfer to a wire rack.
