- 2 cups gluten-free flour blend
- 1/2 teaspoon xanthan gum (if needed)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Cream butter and cream cheese with sugar until light and fluffy.
- Add egg and vanilla, mixing until combined.
- Fold in gluten-free flour blend, xanthan gum, baking powder, and salt.
- Chill the dough for 30–60 minutes.
- Preheat oven to 350°F (175°C).
- Roll dough between parchment or scoop and flatten slightly.
- Bake for 9–12 minutes until edges are set.
- Cool on the sheet for 5 minutes, then transfer to a wire rack.
