Ingredients

  • 1 teaspoon xanthan gum
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 1 1/2 cups warm water (105–110°F / 40–43°C)
  • 2 tablespoons olive oil
  • 1 tablespoon honey

Instructions

  1. Whisk dry ingredients together in a bowl.
  2. Add warm water, olive oil, and honey; mix until smooth.
  3. Let the dough rise until doubled, about 45–60 minutes.
  4. Turn out onto a floured surface, divide, and shape into baguettes.
  5. Proof for 20–30 minutes.
  6. Slash the tops and bake at 450°F (230°C) with steam for the first 10 minutes.

Notes

Best enjoyed warm, sliced with herb butter or garlic oil. Can be stored at room temperature for 2 days or frozen for up to 3 months.
