- 1 cup (226 g) unsalted butter, room temperature
- 1 cup (200 g) granulated sugar
- 4 large eggs, room temperature
- 1 1/2 cups (180 g) gluten-free flour blend
- 1 tsp baking powder
- 1/4 tsp salt
- Powdered sugar, for dusting (optional)
Instructions
- Cream room-temperature butter and sugar until light and fluffy.
- Add eggs one at a time, incorporating fully after each addition.
- Fold in the gluten-free flour blend, baking powder, and salt until just combined.
- Pour batter into a greased 8- or 9-inch round pan.
- Bake at 350°F (175°C) for 30–35 minutes, until edges are golden and center jiggles slightly.
- Let cool slightly before slicing and serving.
Notes
For a dairy-free version, substitute vegan butter and use plant-based milk. To enhance flavor, add lemon or orange zest, or fold in cocoa powder for a chocolate version.
