- 1/4 cup sugar
- 2 cups mixed fruit (peaches, berries, etc.)
- 1-2 teaspoons cornstarch or tapioca starch (for thickening)
- Coarse sugar (for sprinkling)
Instructions
- In a bowl, cut the cold butter into the gluten-free flour until pea-sized bits form.
- Slowly add cold water until the dough clumps; form into a disk and chill for 20 minutes.
- Roll the dough between two sheets of parchment to a thickness similar to a pie crust.
- Transfer the dough on parchment to a sheet pan and pile the fruit in the center, leaving a border.
- Fold the edges of the dough over the fruit, brush with milk or egg wash, and sprinkle with coarse sugar.
- Bake at 375°F (190°C) for 25-30 minutes until golden and bubbly.
- Cool for 15 minutes before slicing and serving.
Notes
Use a balanced blend of gluten-free flours for best results. Cold ingredients help achieve a flaky crust.
