- 1 lb (450 g) ground pork sausage
- 2 cups (200 g) shredded sharp cheddar
- 2 cups (240 g) gluten-free baking mix (or 1 3/4 cups almond flour + 1/4 cup tapioca starch)
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the sausage, cheddar, gluten-free baking mix, egg, baking powder, salt, and pepper.
- Mix until just combined; avoid overworking the mixture.
- Form the mixture into 1-inch balls using a cookie scoop.
- Place the balls on the prepared baking sheet, leaving space between them.
- Bake for 18–22 minutes until golden and an internal temperature of 160°F (71°C) is reached.
- Let rest for 5 minutes before serving.
Notes
For best flavor, use a high-fat sausage. If using lean meats, consider adding olive oil or Greek yogurt for moisture.
