  • 2 cups (200 g) shredded sharp cheddar
  • 2 cups (240 g) gluten-free baking mix (or 1 3/4 cups almond flour + 1/4 cup tapioca starch)
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the sausage, cheddar, gluten-free baking mix, egg, baking powder, salt, and pepper.
  3. Mix until just combined; avoid overworking the mixture.
  4. Form the mixture into 1-inch balls using a cookie scoop.
  5. Place the balls on the prepared baking sheet, leaving space between them.
  6. Bake for 18–22 minutes until golden and an internal temperature of 160°F (71°C) is reached.
  7. Let rest for 5 minutes before serving.
