- 2 cups gluten-free all-purpose flour blend
- 1/4 teaspoon xanthan gum
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin spice blend
- 1/2 cup pumpkin puree
- 1/4 cup sugar
- 3 large eggs
- 1/4 cup applesauce
- 1/4 cup melted butter
- 1/2 cup chocolate chips
- 1/2 cup pecans (optional)
Instructions
- Preheat the oven to 325°F (163°C) and grease a bread pan.
- In a large mixing bowl, combine the gluten-free flour blend, xanthan gum, baking powder, baking soda, and pumpkin spice blend.
- In another bowl, mix together the pumpkin puree, sugar, eggs, applesauce, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix gently. Do not overmix.
- Fold in the chocolate chips and pecans, tossing them in a little flour first to prevent sinking.
- Pour the batter into the prepared bread pan, filling it only 2/3 full.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool completely in the pan before removing.
Notes
Tip: Drain the pumpkin puree on paper towels for 15 minutes to reduce moisture. Blooming spices in melted butter also enhances the flavor.
