  • 2 cups gluten-free all-purpose flour blend
  • 1/4 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin spice blend
  • 1/2 cup pumpkin puree
  • 1/4 cup sugar
  • 3 large eggs
  • 1/4 cup applesauce
  • 1/4 cup melted butter
  • 1/2 cup chocolate chips
  • 1/2 cup pecans (optional)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a bread pan.
  2. In a large mixing bowl, combine the gluten-free flour blend, xanthan gum, baking powder, baking soda, and pumpkin spice blend.
  3. In another bowl, mix together the pumpkin puree, sugar, eggs, applesauce, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix gently. Do not overmix.
  5. Fold in the chocolate chips and pecans, tossing them in a little flour first to prevent sinking.
  6. Pour the batter into the prepared bread pan, filling it only 2/3 full.
  7. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. Let it cool completely in the pan before removing.

Notes

Tip: Drain the pumpkin puree on paper towels for 15 minutes to reduce moisture. Blooming spices in melted butter also enhances the flavor.
