Ingredients
- 2 cups gluten-free all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup honey
- 3 large eggs
- 1/4 cup extra virgin olive oil
- 1 cup unsweetened almond milk
- 1 teaspoon apple cider vinegar
Instructions
- Preheat your oven to 350°F. Line your loaf pan with parchment or oil it lightly.
- Mix the dry ingredients together in a large bowl: gluten-free flour, baking powder, salt.
- In a separate bowl, whisk together the eggs, honey, oil, almond milk, and vinegar until smooth.
- Add the wet ingredients to the dry and mix until just combined.
- Scrape the batter into the prepared pan and smooth the top.
- Bake for 40 to 50 minutes, until golden and a toothpick comes out clean.
- Let it cool before slicing to prevent crumbling.
Notes
For best results, do not overmix and use room temperature eggs. Slice with a serrated knife for clean pieces.
