- 3 cups gluten-free all-purpose flour
- 1½ tsp xanthan gum
- 2 tsp instant yeast
- 1¼ tsp salt
- 2 tbsp sugar
- 1¼ cups milk (warmed to 105–115°F)
- 2 large eggs
- 2 tbsp neutral oil
- 1 tsp apple cider vinegar
Instructions
- Whisk dry ingredients together in a bowl.
- In a separate bowl, whisk the warmed milk, eggs, oil, and vinegar.
- Combine wet and dry ingredients, beating for 2–3 minutes until sticky.
- Pour into a greased 9×5-inch loaf pan, sprinkle oil on top.
- Proof in a warm spot until puffed, about 45–60 minutes.
- Bake at 350°F (175°C) for 40–50 minutes until the internal temperature reaches 200–205°F.
- Cool on a rack for at least 2 hours before slicing.
Notes
For a sweeter variation, add sugar and cinnamon for a breakfast loaf.
