A soft, pillowy gluten-free bread perfect for sandwiches and toast, without the usual dryness.

Ingredients

  • 3 cups gluten-free all-purpose flour
  • 1½ tsp xanthan gum
  • 2 tsp instant yeast
  • 1¼ tsp salt
  • 2 tbsp sugar
  • 1¼ cups milk (warmed to 105–115°F)
  • 2 large eggs
  • 2 tbsp neutral oil
  • 1 tsp apple cider vinegar

Instructions

  1. Whisk dry ingredients together in a bowl.
  2. In a separate bowl, whisk the warmed milk, eggs, oil, and vinegar.
  3. Combine wet and dry ingredients, beating for 2–3 minutes until sticky.
  4. Pour into a greased 9×5-inch loaf pan, sprinkle oil on top.
  5. Proof in a warm spot until puffed, about 45–60 minutes.
  6. Bake at 350°F (175°C) for 40–50 minutes until the internal temperature reaches 200–205°F.
  7. Cool on a rack for at least 2 hours before slicing.

Notes

For a sweeter variation, add sugar and cinnamon for a breakfast loaf.
