A tender, pillowy gluten-free bread that is easy to make and perfect for sandwiches or toast.

Ingredients

  • 3 cups gluten-free all-purpose flour (with xanthan gum included)
  • 1 1/22 tbsp sugar
  • 1 1/2 tsp instant yeast
  • 1 1/4 tsp salt
  • 1 1/4 cups warm liquid (water and milk mix, about 110°F/43°C)
  • 3 large eggs
  • 2 tbsp oil
  • 1 tbsp apple cider vinegar

Instructions

  1. Whisk the dry ingredients together in a bowl.
  2. Warm the liquid and whisk it with the eggs, oil, and vinegar.
  3. Combine the wet and dry ingredients until smooth.
  4. Pour the batter into a greased 9×5-inch loaf pan.
  5. Cover and proof in a warm location until it rises to about 1–1 1/4 inches above the rim (about 45–60 minutes).
  6. Bake at 375°F (190°C) for 35–45 minutes until the top is golden and the center reads 200–205°F (93–96°C).
  7. Cool for at least 30 minutes before slicing.

Notes

Use an instant-read thermometer to check doneness. Store tightly wrapped for optimal freshness.
