- 3 cups gluten-free all-purpose flour (with xanthan gum included)
- 1 1/2–2 tbsp sugar
- 1 1/2 tsp instant yeast
- 1 1/4 tsp salt
- 1 1/4 cups warm liquid (water and milk mix, about 110°F/43°C)
- 3 large eggs
- 2 tbsp oil
- 1 tbsp apple cider vinegar
Instructions
- Whisk the dry ingredients together in a bowl.
- Warm the liquid and whisk it with the eggs, oil, and vinegar.
- Combine the wet and dry ingredients until smooth.
- Pour the batter into a greased 9×5-inch loaf pan.
- Cover and proof in a warm location until it rises to about 1–1 1/4 inches above the rim (about 45–60 minutes).
- Bake at 375°F (190°C) for 35–45 minutes until the top is golden and the center reads 200–205°F (93–96°C).
- Cool for at least 30 minutes before slicing.
Notes
Use an instant-read thermometer to check doneness. Store tightly wrapped for optimal freshness.
