Ingredients

  • 360 g gluten-free flour blend (about 3 cups)
  • 12 tbsp sugar
  • 1½ tsp salt
  • 1 tbsp xanthan gum (if blend lacks it)
  • 2¼ tsp instant yeast
  • 1½ cups warm water (105–115°F)
  • 2 tbsp oil
  • 2 large eggs or 2 tbsp ground flax + 4 tbsp water for egg-free

Instructions

  1. Whisk dry ingredients in a bowl: gluten-free flour blend, sugar, salt, xanthan gum, instant yeast.
  2. In a separate bowl, whisk wet ingredients: warm water, oil, and eggs (or flax mixture).
  3. Mix wet ingredients into the dry until a thick, slightly sticky batter forms.
  4. Pour batter into a greased 9×5 loaf pan.
  5. Let rise in a warm spot (75–85°F) until puffed about 50–75% (30–60 minutes).
  6. Bake in a preheated oven at 375°F (190°C) for 35–45 minutes until top is golden and center reaches 205–210°F.
  7. Cool completely on a rack before slicing for best texture.

Notes

For a sweet twist, try adding apple or cinnamon. Always measure flour by weight for best results.
