Instructions

  1. Whisk dry ingredients together in a bowl.
  2. Add eggs and milk, blending until smooth (a blender works well).
  3. Let the batter rest for 30 minutes to hydrate.
  4. Heat a non-stick or well-seasoned pan over medium heat (325-350°F).
  5. Pour a thin stream of batter into the pan, tilting to coat evenly.
  6. Cook each crêpe for 30–45 seconds until edges lift and underside is pale golden.
  7. Flip and cook for an additional 10–20 seconds.
