A fruity, low-calorie gelatin treat that satisfies your sweet tooth without the guilt.

Ingredients

  • 2 cups water, divided
  • 2 packets unflavored gelatin (about 14 grams total)
  • 1 cup unsweetened fruit juice (cherry, grape, mixed berry, or pomegranate)
  • 1 to 2 tablespoons honey or low-calorie sweetener (optional)
  • 1 tablespoon lemon juice
  • A pinch of salt
  • Optional add-ins: sliced strawberries, blueberries, or mint leaves

Instructions

  1. Pour 1 cup of cool water into a bowl. Sprinkle the gelatin on top and let it sit for 5 to 10 minutes to bloom.
  2. Warm the other 1 cup of water in a small pot, adding the fruit juice, ensuring it’s warm but not boiling.
  3. Turn off the heat and add the bloomed gelatin to the warm liquid, stirring until fully dissolved.
  4. Taste the mixture to see if you need honey or sweetener before adding lemon juice and the pinch of salt.
  5. Pour the mixture into a glass dish or silicone molds. Optionally add berries. Refrigerate for at least 3 hours, preferably overnight.
  6. Slice into cubes or pop out of molds when set. Store in a container in the fridge.

Notes
