- 1 1/2 cups rolled oats, ground to oat flour
- 3/4 cup natural peanut butter (or almond butter)
- 1/3 cup maple syrup (or honey)
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
- 1/2 cup mini chocolate chips, plus extra for topping
- Optional chocolate layer: 4 oz dark chocolate + 1 tbsp coconut oil, melted
Instructions
- Make a soft cookie dough using oat flour, nut butter, liquid sweetener, melted coconut oil, vanilla, and salt.
- Press the dough into an 8×8-inch pan lined with parchment paper.
- If desired, melt dark chocolate and coconut oil; spread over the pressed dough and sprinkle with mini chocolate chips.
- Chill in the refrigerator until firm, then slice into bars.
Notes
For a creamier texture, chill in the freezer for 20-30 minutes, then finish in the fridge.
