- 3 ripe bananas
- 2 eggs
- 1/3 cup oil or melted butter
- 1/2 cup sweetener (sugar, coconut sugar, etc.)
- 1 1/2 cups oat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional)
- 1 tsp vanilla extract (optional)
Instructions
- Mash the bananas in a bowl.
- Whisk in the eggs, oil, sweetener, and vanilla.
- Add all the dry ingredients on top and mix gently, just until combined.
- Pour the mixture into a lined loaf pan.
- Bake at 350°F (175°C) for about 40 to 50 minutes.
- Check for doneness with a toothpick; it should come out mostly clean.
Notes
Let the bread cool before cutting. For variations, consider adding nuts, chocolate chips, or dried fruit.
