Ingredients

  • 1 cup milk (dairy or plant-based)
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup oil or melted butter
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • Optional mix-ins: nuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together pumpkin puree, milk, eggs, maple syrup, oil or melted butter, and vanilla extract.
  3. In another bowl, stir together rolled oats, baking powder, cinnamon, nutmeg, and salt.
  4. Fold the dry ingredients into the wet mixture until combined.
  5. Add any optional mix-ins, then pour the mixture into a greased 8×8 or 9×9 baking dish.
  6. Bake for 35-45 minutes until the center is set and a toothpick inserted comes out mostly clean.
  7. Let it rest for 10 minutes before slicing and serving.

Notes

For best texture, use rolled oats (old-fashioned) and bake in an 8×8 pan for sliceable bars.
