- Gluten-Free Flour Blend: 2 cups
- Pumpkin Purée: 1 cup

Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan.
- In a bowl, whisk together eggs, pumpkin, oil, brown sugar, and maple syrup until smooth.
- In another bowl, combine gluten-free flour blend, baking powder, baking soda, salt, and spices.
- Pour the dry ingredients into the wet ingredients and stir until just combined; lumpy batter is fine.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Let cool before slicing.
Notes
For best results, let eggs and pumpkin reach room temperature before mixing. Don’t skip lining your pan.
