Ingredients

  • 1 cup water, divided
  • 1 packet unflavored gelatin (about 2 and 1/4 teaspoons)
  • 3/4 cup plain Greek yogurt (or lactose free if needed)
  • 1/2 cup cottage cheese (optional)
  • 2 to 3 tablespoons fresh lemon or orange juice
  • 1 to 2 teaspoons honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: berries, a spoon of chia, or a few orange segments

Instructions

  1. Bloom the gelatin: Pour 1/2 cup cool water into a bowl. Sprinkle the gelatin over the top and let it sit for 5 minutes.
  2. Dissolve it: Heat the remaining 1/2 cup water until hot but not boiling. Stir the hot water into the bloomed gelatin until it fully dissolves.
  3. Blend the creamy base: In a blender, mix the Greek yogurt, cottage cheese (if using), citrus juice, vanilla, sweetener (if using), and pinch of salt until smooth.
  4. Combine without curdling: Slowly pour the warm gelatin water into the yogurt mixture while blending on low.
  5. Chill: Pour into 3 to 4 small cups or jars. Refrigerate for 2 to 3 hours until set.
  6. Serve: Top with berries or fruit if desired.

Notes

Keep portions small and adjust flavors based on personal preference. Can be made with different flavors if citrus bothers the stomach.
