- 180–200 g gluten-free flour blend
- 1 tsp xanthan gum (if needed)
- 1 tbsp instant yeast
- 1 tbsp sugar
- 1 tsp salt
- 100–110°F warm liquid (milk or dairy-free milk)
- 1 egg (or aquafaba for egg-free)
- 2 tbsp melted butter or neutral oil
- 1 tsp apple cider vinegar
Instructions
- Combine gluten-free flour, xanthan gum, yeast, sugar, and salt in a bowl.
- Add warm liquid, egg (or aquafaba), melted butter (or oil), and vinegar. Mix until the dough comes together.
- Scoop equal portions of dough, shape on a parchment-lined tray.
- Proof until puffy, about 45-60 minutes.
- Brush with egg wash and bake at 375°F (190°C) for 15–18 minutes until golden.
Notes
Store cooled buns in an airtight container for up to 2 days or freeze individually for up to 3 months. Adjust sugar for less sweetness.
