Easy and forgiving gluten-free dinner rolls with a pillowy texture, perfect for any meal.

Ingredients

  • 2 1/4 tsp instant yeast
  • 1 tbsp sugar
  • 1 cup warm milk (or dairy-free milk)
  • 2 cups gluten-free all-purpose flour blend (with xanthan gum or add 1 tsp)
  • 1 tsp salt
  • 2 large eggs
  • 2 tbsp softened butter (or olive oil for dairy-free)

Instructions

  1. Proof the yeast with sugar in warm milk for about 5-10 minutes.
  2. In a large bowl, combine the flour blend, salt, eggs, and yeast mixture.
  3. Mix until a soft, slightly sticky dough forms.
  4. Spoon 12 equal portions into a greased 9×13 inch pan.
  5. Cover and let rise in a warm spot for about 45-60 minutes until puffy.
  6. Brush with melted butter or oil.
  7. Bake at 375°F (190°C) for 18-22 minutes until golden.
  8. Cool briefly before serving.

Notes

For best results, measure flour by weight. Dough should be wetter than traditional dough.
