- 2 1/4 tsp instant yeast
- 1 tbsp sugar
- 1 cup warm milk (or dairy-free milk)
- 2 cups gluten-free all-purpose flour blend (with xanthan gum or add 1 tsp)
- 1 tsp salt
- 2 large eggs
- 2 tbsp softened butter (or olive oil for dairy-free)
Instructions
- Proof the yeast with sugar in warm milk for about 5-10 minutes.
- In a large bowl, combine the flour blend, salt, eggs, and yeast mixture.
- Mix until a soft, slightly sticky dough forms.
- Spoon 12 equal portions into a greased 9×13 inch pan.
- Cover and let rise in a warm spot for about 45-60 minutes until puffy.
- Brush with melted butter or oil.
- Bake at 375°F (190°C) for 18-22 minutes until golden.
- Cool briefly before serving.
Notes
For best results, measure flour by weight. Dough should be wetter than traditional dough.
