- 2 1/4 tsp instant yeast (one packet)
- 1 tbsp sugar
- 1 cup warm milk (about 105–110°F / 40–43°C)
- 2 cups gluten-free all-purpose flour blend (with xanthan gum or add 1 tsp)
- 1 tsp salt
- 2 large eggs
- 2 tbsp softened butter (or 2 tbsp olive oil for dairy-free)
Instructions
- Proof the yeast with sugar in warm milk.
- In a large bowl, combine flour, salt, eggs, and the yeast mixture.
- Mix until a soft, slightly sticky dough forms.
- Spoon 12 portions into a greased 9×13 inch pan.
- Cover and let rise in a warm spot until puffy (about 45–60 minutes).
- Brush with melted butter and bake at 375°F (190°C) for 18–22 minutes until golden.
- Cool briefly before serving.
Notes
For best results, measure flour by weight and ensure warm liquid is at the correct temperature for activating yeast.
