- 4 large eggs, room temperature
- 1 cup vegetable oil
- 8 oz cream cheese, room temperature
- ½ cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a loaf pan by greasing and lining it with parchment paper.
- Mix the flour, sugar, baking powder, baking soda, spices, and salt in a bowl.
- Incorporate the eggs and oil into the dry ingredients until just combined.
- Fold in the grated carrots gently.
- Whip the cream cheese with powdered sugar until smooth for the filling.
- Pour half of the batter into the prepared loaf pan.
- Spread the cream cheese mixture over the batter.
- Top with the remaining batter.
- Bake for 55 minutes or until a toothpick comes out clean.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use freshly grated carrots and avoid overmixing the batter.
