Ingredients

  • 2 cups millet flour
  • 1 cup potato starch
  • 1/2 cup tapioca flour
  • 2 teaspoons instant yeast
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon salt
  • 1 1/4 cups warm water

Instructions

  1. In a large bowl, whisk together the millet flour, potato starch, tapioca flour, instant yeast, and salt.
  2. In another bowl, mix the warm water, olive oil, and maple syrup.
  3. Pour the wet ingredients into the dry ingredients and stir until smooth and thick.
  4. Grease a loaf pan and transfer the dough, flattening the top if needed.
  5. Cover and let it rise in a warm place for 30-45 minutes.
  6. Preheat the oven to 375°F.
  7. Bake for 35-40 minutes, until the top is golden and sounds hollow when tapped.
  8. Let cool completely before slicing.
