- 1 pound (450 g) ground pork sausage (mild or spicy)
- 2 cups (200 g) shredded sharp cheddar
- 2 cups (240 g) gluten-free baking mix (or 1 3/4 cups almond flour + 1/4 cup tapioca starch)
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Combine the sausage, cheddar, gluten-free baking mix (or almond flour and tapioca starch), egg, baking powder, salt, and black pepper in a mixing bowl. Mix until just combined.
- Form the mixture into 1-inch balls using a cookie scoop and place on a parchment-lined baking sheet.
- Bake at 375°F (190°C) for 18–22 minutes until golden and a thermometer registers 160°F (71°C) internally.
- Let rest for 5 minutes before serving.
Notes
For best flavor and moisture, use a high-fat sausage. Add olive oil or Greek yogurt if using lean meats.
