  • 2 cups (200 g) shredded sharp cheddar
  • 2 cups (240 g) gluten-free baking mix (or 1 3/4 cups almond flour + 1/4 cup tapioca starch)
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Combine the sausage, cheddar, gluten-free baking mix (or almond flour and tapioca starch), egg, baking powder, salt, and black pepper in a mixing bowl. Mix until just combined.
  2. Form the mixture into 1-inch balls using a cookie scoop and place on a parchment-lined baking sheet.
  3. Bake at 375°F (190°C) for 18–22 minutes until golden and a thermometer registers 160°F (71°C) internally.
  4. Let rest for 5 minutes before serving.
