Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cinnamon
  • 2 cups milk (dairy or non-dairy)
  • 1/3 cup maple syrup
  • 1 large egg (or 1 tbsp ground flax + 3 tbsp water for vegan)
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking pan.
  2. In a large bowl, whisk together the oats, baking powder, salt, and cinnamon.
  3. In another bowl, mix the milk, maple syrup, egg (or flax mixture), melted butter (or coconut oil), and vanilla.
  4. Combine the wet and dry ingredients gently until just mixed, then fold in the blueberries.
  5. Pour into the prepared baking pan and bake for 35–40 minutes until the center is set and edges are golden.
  6. Let cool for 10–15 minutes before slicing and serving warm.

Notes

Letting the baked oatmeal rest after baking improves sliceability and texture. For even browning, rotate the pan halfway through baking.
