Ingredients

  • 1 cup milk
  • 8 slices crispy bacon
  • 2 cups mixed vegetables (bell peppers, onions, spinach)
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the bacon until crispy, then chop it into pieces.
  3. Sauté the mixed vegetables in the remaining bacon grease or olive oil until tender.
  4. Combine the eggs, milk, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  5. Add the cooked bacon and sautéed vegetables to the egg mixture.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. Sprinkle the shredded cheese on top.
  8. Bake for 35-40 minutes, or until the eggs are set and lightly golden on top.
