- 1 cup pecans
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a round cake pan well.
- Melt the butter in a saucepan, then stir in brown sugar until dissolved.
- Pour the caramel mixture into the prepared pan and evenly distribute the pecans over the top.
- In a large bowl, cream together the granulated sugar and eggs until light and fluffy.
- Add in the milk and vanilla extract, and mix until well combined.
- In another bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Pour the batter over the pecans in the pan.
- Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool for a few minutes, then invert onto a serving plate.
Notes
Serve warm with vanilla ice cream or whipped cream for an extra special treat.
