- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup beef broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons cornstarch
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Sauté the chicken until golden brown and cooked through, about 6-7 minutes per side.
- Remove chicken from the skillet and set aside.
- Add diced onions and garlic to the skillet, cooking until softened.
- Stir in the beef broth and bring to a simmer.
- Mix the cornstarch with a little water and add to the skillet, stirring until the gravy thickens.
- Plate the chicken, pour the gravy over it, and sprinkle with cheese.
- Broil in the oven until the cheese is bubbly, about 2-3 minutes.
Notes
For a gluten-free option, use gluten-free flour or cornstarch for the gravy.
